Our story — from market stalls to refined plates

We began by rescuing seasonal surplus at local markets and testing small plates for neighbors. Over five years the approach evolved: simpler ingredient lists, clearer technique, and a respect for producers. That arc shaped a teaching style that privileges practice over spectacle, and a belief that good technique is accessible.

Today the masterclass is a bridge — between the market, the home kitchen, and the table where stories are shared.
